Almost every day in my well-used home kitchen, I work with a double standard. I pop something in the oven and dial in a specific temperature, say 175°C. Being on the cutting edge doesn’t come cheap, especially with a restaurantgrade device. At $1,800, many users will want to wait for a home version to appear.
